A Frittata is a delicious meal that can be made quickly and inexpensively! Add your favorite seasonal vegetables, or follow the recommendations below:
1/2 onion, diced
3 gloves of garlic, diced
2 tbs of organic vegetable broth
1 cup of sliced mushrooms of your choice (we recommend using ones in season)
1/2 tomato, diced
3 large organic eggs
3 tbs chopped fresh, organic basil (why not try growing your own?)
salt and pepper to taste
Heat 1 tbs of broth in a skillet. Saute the onion on medium/low for 3-4 minutes or until golden brown. Stir frequently! Add the garlic and mushrooms, stirring for another 2 minutes. Add the second tbs of broth, the tomato, salt and pepper and cook for another minute. In a separate bowl, beat the eggs adding salt, pepper and chopped basil. Pour the egg mixture over your saute’d vegetables and turn the heat to low. Cover the skillet and allow it to cook for an additional 5 minutes, or until firm.
